Since arriving in London, there are sweets and treats on every corner, which has made me seriously miss baking! I decided to pick up some flour, sugar, butter, and blueberry jam to make some easy Swedish Thumbprint cookies! Eli had never helped me bake before, so I thought this was a great time to let him take his turn at baking! Needless to say, nothing has ever entertained him this long, so I think he shares his momma’s love!

He took his job as official stirrer very seriously at the beginning!

Remember, we are still in temporary housing, so we had to seriously improvise to make some cookies. We did not have a bowl, so we settled for a pot. I didn’t have any kind of whisk (or spoon bigger than a tablespoon for that matter), so I picked up this awesome whisk at Whole Foods that I am sure will get a lot of use over the next 2 years!

Eli was a fantastic help until he realized he could eat the batter. He kept pointing to the flour and saying “more tookies!”

Side Note: Notice Eli’s pajama shirt with his jeans? Well he has officially started toddlerhood, and on this day he would NOT take his pajama shirt off for anything. All of the usuals (Muffins, cookies, pasta, rice, outside) did not work to get him to get the shirt off. So for this day, I threw a sweatshirt on top of it, and he toured around London all day like this! That afternoon when we decided to cook, I took off his sweatshirt and was going to change him into a t-shirt, and he still would not take the shirt off! Oh well…when he is headed off for his first date someday very far away, I will wish he was still little and fighting me to keep his Goodnight Dinosaur kickee shirt on!

Swedish Thumbprint Cookie Recipe:

-1 cup butter

-1/2 cup sugar

-2 cups flour

-Jam of your choice on top of each cookie (We used blueberry because that’s Eli’s fave)

Mix the butter and sugar until it gets creamy. Add the flour slowly while mixing (Recipe said to sift the flour, but we obviously couldn’t do that). Roll the cookie dough into small balls once it is well mixed. Stick your thumb in each cookie to create a small hole for jam (Or have your child stick all of their fingers in the cookies to create a mess as pictured above). Add jam to each cookie! Back on 375 for 15 minutes.

There is no after pictures, because the first batch was burnt to a crisp (I still haven’t figured out the oven situation). And the second batch tasted great but looked like a hot mess! This is definitely one of those it’s the journey that counts, not the destination type of moments!

However, he did manage to take the pajama shirt off at 6:00 pm because it was so dirty! I call that a win!
